PIES (9 1/2 inches)
You know what these are. Double crust, decorative crust, lattice, or crumb. Yum.
GALETTES (little: 6-7 inches | large: 9-10 inches)
Also known as freeform pies, or crostatas. A single crust is rolled out and filled with fruit or vegetables. The edge is folded in to create a border, showing off the filling.
CROSTATAS (little: 6-7 inches | large: 9-10 inches)
Crostata is the Italian word for this freeform, open-top pastry, galette is the French. On this menu I'm using "crostata" to describe the savory version.
TARTLETS (2 1/2 inches)
These little open-top gems are made in a muffin tin and filled up with fruit. See a photo of cherry tartlets on the contact page of this site.
HAND PIES (approximately 4 inches by 2 inches)
Half-moon shaped fruit-filled pastries that you can hold in your hand. Extra flaky crust. Sprinkled with sugar.
A Few serving suggestions:
- Quiche or Crostata make a lovely meal paired with a leafy or crunchy vegetable salad or bowl of soup - vegetable soup, mushroom barley soup, borscht, carrot-ginger, butternut squash, or minestrone...
- Crostatas and galettes look elegant and taste delicious with a dollop of lightly sweet whipped cream. Add a few drops of vanilla when you whip the cream.
- Flourless Chocolate Cake: Place a small slice on a plate next to or partially on top of a generous scoop of the passionfruit curd. Add a dollop of whipped cream and/or a few berries or a twist of citrus for color contrast to complete the plate!
