Baking with Extracts
CARDAMOM EXTRACT: Delicious in scones, tea cake, pudding, frosting and cocktails. Cardamom pairs nicely with vanilla, cinnamon, orange, clove, or rose. Try it in a champagne cocktail. You'll find cardamom in many traditional Scandinavian pastries and breads.

CINNAMON EXTRACT: Use this delicious extract in addition to or in place of vanilla extract in any of your favorite cookies, muffins, coffee cakes or frostings. It is also wonderful in hot cocoa, coffee, or a hot bowl of oatmeal.

ORANGE OR LEMON EXTRACT: Each of these citrus extracts are wonderful in frostings, puddings, pound cakes, scones, etc. I like to pair orange with cardamon extract in muffins or cakes. I like to add a little lemon extract plus a little lemon zest to tea cakes, pound cake, or scones. A half teaspoon in a citrusy or floral cocktail or champagne spritzer is delicious.

ANISE EXTRACT: Lovely in baking and cocktails. Anise is found in simple butter cookies, coffee cake, and biscotti. It pairs beautifully with orange.

Here are a couple of simple recipes to get started: Yogurt Tea Cake, Cardamom Cream Cheese Cookies, Banana Cinnamon Bundt Cake. If you are substituting an extract for a powdered spice in your recipe, add it with the liquid ingredients rather than the dry. Experiment to find the quantity and strength of flavor you want.
